how do i change the name displayed on the check out page from my email address to my business name?

You will have to do this through your PayPal account.

First, login to your PayPal account at www.paypal.com.

Click on "My Account"

Click on "Profile"

Click on "Custom Payment Pages"

Then click on the link that says, "Learn More"

That will give you detailed instructions on how to set that up.
